Sunday, July 13 is most likely pencilled onto the calendars of all football fans as the day to get the snacks and drinks ready for a World Cup Final party.
It’s easy to slip into a fat-fuelled frenzy of unhealthy snacking, but if you keep it simple and follow some of these recipes, you can keep your snacks super-healthy and tasty to boot, giving you less time to worry about calorie counting, and more time to shout at the telly!
Vegetable dipping chips- The dipping chip is a staple of a good party, but rather than potato chips heavy on saturated fat, why not try a beetroot, parsnip, or sweet potato alternative? Heat your oven to 200C, gas mark 6, and choose the veggies of your choice and thinly slice them. You can use a mandolin if you have one, but be careful not to slice your fingers! Lay the veg onto kitchen paper to soak up any excess moisture and then season with salt, pepper, and if you fancy it some chilli powder.
Lay onto a baking tray and add two tablespoons of olive oil. Make sure the veg is coated with the oil. Bake on the lowest shelf for around 20 minutes, turning half way though. They may not need the full time, so check after 15 that they are golden and crisp.
Now add the following for dipping.....
Raw chunky guacamole – A tasty guacamole will leave you satisfied that you’re healthy snacking and won’t pile on the pounds. All you need is about three good ripe avocados, a lime, salt and pepper, one red chilli, and two medium tomatoes. Cut your avocados into chunks, and try and cut the tomatoes into slightly smaller chunks. Put together in a bowl and add the juice of the lime, the finely chopped chilli and season with the salt and pepper. Gently crush the ingredients together with a fork, and hey presto! Guacamole dip with nothing but good stuff in!
Tasty salsa – Using simple raw ingredients you can create a delicious salsa in minutes. You’ll need around three ripe tomatoes, a cucumber, a handful of coriander, a red chilli, juice of a lime, pepper and salt, and a red onion. Cut the tomatoes, cucumber, onion and chilli as finely as possible and mix together in a bowl. Squeeze as much lime juice as you like to taste, and add the salt and pepper. You could add a splash of Tabasco sauce if you fancy an extra kick!
Now roll on the World Cup final, knowing that you’ve already got these quick and easy snacks in the back of the net!
