Leftover Turkey Burgers

Can leftover turkey be as tasty as Christmas dinner itself? We think so.  If you’re hankering after a healthier option but still crave that comfort food feeling, here’s a light and easy burger recipe you’ll love.

These turkey burgers use ingredients you should still have lurking in the fridge so they’re a great budget option. And while devouring the remaining Christmas pudding for breakfast isn’t the best start to the day, you don’ t have to waste a moment’s guilt on enjoying as much turkey as you like.

A 4oz serving of turkey contains just 100 calories but packs a huge 32 gram protein punch. It’s leaner than beef so makes a perfect low-fat, high-protein burger. Turkey is also a rich source of the essential amino acid tryptophan which helps you sleep. It contains selenium, omega-3, B3 and B6, plus turkey can help keep insulin levels within healthy levels.


Serves 4.

  • 2 cups of leftover turkey, blitzed in a food processor
  • 1 slice of wholewheat bread
  • 1 cup of leftover stuffing, mashed sweet potato or cauliflower
  • ½ cup of diced raw veggies – any leftover ones such as peppers, broccoli, celery and carrots are fine
  • 1 egg
  • 1 clove garlic
  • Black pepper
  • ¼ cup of ground nuts (unsalted ones are healthier but salted are tasty!)


  1. Tear up the bread and blitz to breadcrumbs in a food processor.
  2. Add the turkey, raw veggies, garlic and nuts and process until finely chopped.
  3. Combine all the ingredients in a bowl and mix thoroughly.
  4. Form into patties.
  5. Heat a frying pan with one tbsp of oil and cook the patties for 3-5 minutes on each side, or until golden brown and hot in the middle.

Note: make sure the turkey is thoroughly reheated until piping hot and is only reheated once.


You can serve these as a main meal, delicious with coleslaw and sweet potato wedges. Or enjoy them in a sandwich/wrap/pitta/wholewheat bun adding a combination of mustard, red onions, avocado, rocket or tomato as a healthy lunch option. High in fibre and nutrition, low on calories, big on flavour. Can you really ask more from a delicious festive meal?

Turkey is also one of the best foods for fitness, so why not shake away those Christmas cobwebs with a refreshing gym session, then tuck into this muscle-building burger while you catch up on some more festive telly!

Just had these tonight with leftover mashed potato and slated nuts in a wrap with leftover cranberry sauce. Delicious and tasted very healthy too.
